Three Stage Breaker

Our high-end Breaker uses three stages of breakers for the cracking of raw, dried, roasted, cold or hot beans. The frequency controlled rotation speed of the breakers increases from one stage to the next, with broken beans sorted between stages. Each cocoa bean only receives sufficient energy necessary to break the shell.

Sterilistion process with Breaker
Royal Duyvis Wiener B.V. offers F.B. Lehmann’s unique breaking method integrated with the sterilization process. This unique treatment produces cocoa nibs free of bacteria.

Controlled vapour treatment
The Steriliser is used for the reduction of bacteria and de-moulding of cocoa beans. With its accurate controlled vapour treatment, a uniform and reliable reduction of bacteria, yeast and fungi is achieved. The steriliser is suitable for cocoa beans, nuts, and almonds in a range of 1-8 tons per hour. The vapour pressure, and subsequent sudden pressure relief, prepares the beans for the breaker and provide continuous relief during the crushing and separating process. Downstream airflow dries the beans and removes them of all residual moisture.

This cocoa butter press machine is like no other with respect to its design and optimised production process. Our cocoa butter press machine truly excels in terms of its sustainability and efficiency.

Unrivalled processing power
These cocoa pressing machines have a number of features that enhance the cocoa butter pressing process. The materials from which Duyvis’ cocoa pressing machines are made are of the highest grade. They are thus extremely durable and require the minimum expenditure on maintenance. The pressing cycles are flexible and highly adjustable; this is essential as the varying properties of the liquor will impact upon the way in which the press operates.

The cocoa butter press machine operates in a number of stages. First, the raw liquor is prepared by being rapidly heated and intensely agitated. When the liquor is ready to enter the pressing equipment, the liquor pump fills the press at high speed with liquor.

Synthesis of theory with practice
The strengths of Royal Duyvis Wiener engineers and technical experts ensure the machines perform to what are absolutely the highest standards possible.

The design and manipulation of the software used to control the cocoa pressing machines are optimised to continuously adjust the power supply to the main hydraulic ram. This enables the speed of the ram to be continuously monitored and adjusted in response to variations in the properties of the liquor.

A rapid process
High capacity release valves and high-speed liquor pumps ensure a quick release of the cake from the cocoa pressing machines. No time is lost in the transition between cycles. As the resultant cake from one cycle is dropped, the next cycle commences.

Once dropped, cakes are cut into ‘kibbled cakes’, or smaller sizes in a breaker, ready for the powdering stage.

Superior arrangements for maintenance
The continual monitoring and maintenance of all our cocoa processing machines is a priority in our manufacturing process at Royal Duyvis Wiener; to ensure our machines run safely and smoothly.

The transparent cover provides safety against the high forces and speeds achieved by the cocoa butter press and cocoa processing machines. This cover remains securely locked and can only be released for cleaning and maintenance once the presses themselves are locked.

Continuous Bean & Nib Roasting

Our continuous roasters are used for drying or roasting of cocoa beans and alkalised nibs, as well as for the treatment of nuts, almonds, pumpkin seeds and oily fruits.

Continuous Bean Roasting System
With the continuous bean roasting system, the shell protects the nib from over roasting, ensuring all flavours are retained in the nib. The beans pass through the roaster by gravity and are captured in layers. In each cycle, one small batch is dumped to the next level. Hot air passes through each layer from bottom to top. Every bean receives the desired amount of hot air and the same treatment, allowing every bean to be roasted equally.

After roasting, the shell is easily removable. The F.B. Lehmann bean roasters have many advantages compared to other systems:
The Continuous Roaster performs a gentle roasting at low temperature for excellent flavour development. The power range is from 0.5 to 8 t / h with oil, gas or steam heating, with a hot air intake of temperatures 130 to 140 ° C for pre-drying or 170 to 180 ° C for the roasting process.

Continuous Nib Roasting System
The advantages of F.B. Lehmann continuous nib roasting principle, has proven its value in the chocolate industry and cocoa production for years. It is an excellent roasting method due to low energy consumption, flexible flavour development and excellent end-product colour.

In the continuous nib roasting approach, the pre-dried (alkalised) nibs are fed to the roaster. Small batches of nibs are all treated the same way due to the continuous turning of layers. The result: a very uniform flavour development.

High acid and non-fermented beans can be upgraded to a less acidic and more cocoa flavoured product. Additional advantages of the system are that the roasters can be adjusted to process any kind of bean-type and origin, and is suitable for 24/7 production. Due to a low roasting temperature the exhaust air has a lower concentration of odor. The nib roaster has a cooling section to bring the nibs down to the ideal temperature for liquor grinding.
