Dedy Batch Temper

The Dedy Batch-Temper for 30 kg or 65 kg with electrical cooling
can be used at any location because it works without water. The stirrer is removable to facilitate thorough cleaning. The cooling machine heats and cools, so the tempering process proceeds very quickly and reliably and is controlled via three digital thermostats for an excellent result. Operating the machine in standby mode allows for example to dissolve the chocolate overnight and subsequently temper it fully automatically by switching to production mode. The drain cock is equipped with a adjustable heater. Its efficient insulation prevents loss of heat. The kettle is completely made out of stainless steel and delivered ready to plug-in. At request, it can also be equipped with rollers for mobility.
The Dedy Batch Temper for 150 kg with electrical cooling
is a double-walled kettle which can be used at any location. It uses water as heat transfer medium. Prior to first operation it has to be filled with water once. An indicator light signals when the water level has to be checked and the kettle has to be refilled. The stirrer is removable to facilitate thorough cleaning. The standby mode allows for example to dissolve the chocolate overnight and subsequently be tempered fully automatically by switching to production mode. The excellent tempering process is controlled by three digital thermostats. The kettle is also equipped with a heated drain cock and is perfectly insulated. The device is completely made out of stainless steel and delivered ready to plug-in. At request, it can also be equipped with rollers for increased mobility.

Dedy Cooling Tunnel

The Dedy Cooling Tunnel
can be produced for all bandwidths and also can be adjusted to enrobing machines of other manufacturers. Its standard width is 320 mm and its standard length 6 meters; 1 m decoration table - 4 m cooling tunnel - 1 m take-off table. According to customer requirement the cooling tunnel can also be produced with a significantly increased length. The decoration- and take-off tables are equipped with a belt control unit. The engine is frequency-controlled. All cooling tunnel covers can be easily removed for efficient cleaning. The entire cooling tunnel is made out of stainless steel; the belts are made out of embossed stainless steel sheets. The air circulation compressor is infinitely variable and the cooling air is dried at maximum. The counter current process guarantees for a gentle cooling of the products to be enrobed. Switching to a light barrier control unit is the precondition for optimal utilization of the duration time of the products to be enrobed in the cooling tunnel.

A special highlight is the Dedy Glass Cooling Tunnel which makes it possible for the customer to view the entire manufacturing process from the placing of the products to be enrobed (e.g. truffles) on the belt, their enrobing with chocolate, their drying in the glass cooling tunnel, to their removal and packaging.

Dedy Enrobers

The Dedy Enrobing Machines

are available with belt widths of 120 mm, 220 mm, 320 mm and 420 mm.
The models mainly differ in terms of belt width and capacity. They are movable and suitable for all enrobing jobs. The capacity is between 15 kg and 30 kg of chocolate and can be expanded to a total of approximately 60 kg or 90 kg of dissolved chocolate by means of two under-mounted, heated troughs.
Pastries of all kinds and cakes as well as cream cheese and for example dates can be enrobed with chocolate coating, fudge, sugar icing or glaze. The machine normally runs at a belt speed between 0.5 and 4 m per minute, the belt speed is infinitely variable. The so-called evener cylinder which is mounted at the end of the belt prevents the coating from producing threads. All parts of the machine are designed to be very easy to clean, extremely robust and user friendly. Total enrobing, bottom enrobing, combined bottom, side and partial enrobing are possible. The exact chocolate temperature is controlled via an extremely sensitive digital thermostat with a one-tenth centigrade scale. Heating is achieved via a built-in fully electronic air circulation system. Two thermostats allow for a standby mode and a production mode. The belt, the chocolate wheel, and the chocolate tank are easily replaceable. The machines are supplied according to specific customer needs either with short take-off tables and paper, special take-off tables with photo eye (stop-and-go for batch working) or with a cooling tunnel.

As a standard, every enrobing machine has a pouring device for filling chocolate into chocolate moulds.

Furthermore, specific additional devices like truffle belts with additional heating, powder truffle tables, vibrating tables, and special belts for ginger bread are available. The entire machine is made out of stainless steel.

Dedy Praline Cutters


The Dedy Praline Cutter
is perfectly suited for cutting praline substance, fat substance, butter, gianduja, marzipan, fondant caramel, ganache, jelly substance, petit fours, cut pralines and similar products into precise squares, rectangles and rhombi. The praline substance slab of 360 x 360 mm is the result of rolling the material out between rails or filling mould frames or mould plates which we produce in accordance with your specifications.
Pralines are cut as follows:
The either rolled-out, poured-out and evenly distributed substance is applied to the base of the cutter. The first cut is made by using the corresponding frame cutter. A thin sheet of stainless steel which is part of the set is pushed under the cut substance from behind and the strips are lifted off.
The frame cutter is opened, and the strips are turned 90° before being cut a second time - the result is a square shape. To get a rhombi-like shape, the strips are placed transversely. If the goal is a rectangle, different frame cutters are used for the second cut. The base is made out of anodized aluminium; all other parts are made of stainless steel.

The company Dedy GmbH was founded in 1946 by Wilhelm Dedy Senior. Since then this family-owned enterprise, now in the third generation, has been making confectionery and chocolate making machines for small craft companies as well as large-scale ones.
The machines made by Dedy stand for quality, innovation and an excellent after-sales service. They are exported world-wide.
The Dedy enrobing machines with a belt width of 120mm, 220 mm, 320 mm and 420mm are movable (only the 120mm model is a table top model) and suitable for all enrobing jobs. They have a capacity of approximately 20 kg chocolate; which can be expanded to a total of approximately 60 kg dissolved chocolate by means of two under mounted, heated troughs. Pastries of all kinds and cakes up to a height of approximately 12 cm, as well as cream cheese and dates can be enrobed with chocolate coating, fudge, sugar icing or glaze. All parts of the machine are designed so as to be very easy to clean, extremely robust and user-friendly. The latest improvement concerning the Dedy enrober is, that the enrobers are now equipped with a drain cock to facilitate the cleaning of the machine, the exchanging of the chocolate and also the taking out off the tanks for thorough cleaning and they got a better insulation in order to minimize the heat loss.
Total enrobing, bottom enrobing, combined bottom, side and partial enrobing are possible. The machines are supplied according to specific customer wishes either with short take-off tables and paper, special take-off tables with photo eye (stop-and-go for batch working) or with cooling tunnel.
The latest improvement in the Dedy Enrobers 220mm and 320mm is, that they are now equipped with a drain cock to facilitate cleaning of the machine, change of chocolate and also removal of the tanks for thorough cleaning. And the machines have been given a better insulation to minimize heat loss.

A new highlight is the Dedy glassy cooling tunnel, which makes it possible to show the complete manufacturing process from putting on the f.e. truffles on the belt, enrobing them with chocolate, see them running through the glassy cooling tunnel until the finished product will be taken off.

In addition to manufacturing chocolate enrobing machines and cooling tunnels, Dedy specializes in the production of chocolate melting (30 kg, 60 kg, 150 kg, 250 kg) and tempering kettles (30kg, 60kg, 150kg), praline cutters, cookie cutters and small devices for chocolate processing.
New is a Dedy mini-moulding machine with a capacity of about 23kg of chocolate with a vibrating table.

What is special about Dedy machines is the fact that their manufacture is backed by decades of know-how and experience and that they are being constantly improved. Even individual customer wishes can always be taken into account.
