Exact Mixing Introduces New Hydrobond Technology To Speed Mixing Process

Exact Mixing, a leading provider of innovative continuous mixing solutions, has introduced a new Hydrobond technology that bonds particles of water to particles of a dry ingredient stream (typically flour) very quickly, with little temperature gain and low energy use.

Hydrobond technology mixes dough on a particle-to-particle basis.  It is based on the principle that mixing smaller amounts of liquid and dry ingredients together at one time is easier and more efficient.

In operation, a high-speed shaft divides the dry stream into the smallest particles possible.  These particles then make contact with the liquids which have been converted into a mist.  The result is that the individual particles of dry material and individual particles of liquid coming together are instantly mixed.  Minimal energy is required and little heat is added to the materials.

Hydrobond technology can be used with a continuous mixer to make the mixing process more efficient or with a pre-hydration system to mix particles of fl­our, minors and water directly into a brew holding tank. This system speeds up the continuous process allowing for the use of a shorter mixer, which means a smaller footprint, lower equipment costs, and lower energy costs.

 The advantages of Exact Mixing Hydrobond technology include, rapid hydration resulting in improved final mixing efficiency, less heat generated, higher levels of hydration possible and reduced cost of mixing systems.

Thermatec High Radiant Ceiling Now Offered By Reading Bakery Systems For Thomas L. Green Prism Ovens

Reading Bakery Systems (RBS) now offers the Thomas L. Green Prism Oven with the Thermatec High Radiant Ceiling – a new technology that has comparable performance to traditional fire brick oven ceilings. The Thermatec Ceiling replicates the thermal emissivity and storage of fire bricks by using specially treated steel backed by a high-density insulating board. The Thermatec High Radiant Ceiling radiates heat as effectively as fire bricks, is less expensive and does not need the maintenance that fire bricks require.

“Food manufacturers today increasingly are under pressure to increase efficiency, productivity, safety and profitability,” said Joe Zaleski, President, Reading Bakery Systems.  “This means looking to alternative technologies that can decrease oven heat-up and changeover times, lower oven maintenance costs and reduce risks of product contamination. Extensive pilot and field testing confirm this technology makes Thermatec High Radiant Ceiling an excellent alternative to classic brick fired ovens.”

The high-emissivity steel used in the Thermatec High Radiant Ceiling is combined with an increased density, mineral board insulation that functions as the conductive heat block and thermal storage mass. This creates higher surface temperatures on the oven ceiling, enabling the thermal ceiling to radiate heat comparable to that of a fire brick ceiling.   

Studies have shown that a higher radiant component in the baking product can assist with heat transfer and color development, particularly with products requiring high firepower such as saltine and snack crackers, water crackers, lavosh, and matzo products.

The Thomas L. Green Prism Oven is now available with a choice of the traditional fire brick ceiling or the new Thermatec High Radiant Ceiling.

Reading Bakery Systems Names Joseph Pocevicius European Sales Manager

Reading Bakery Systems, one of the world’s leading manufacturers of baking and snack systems, has announced the appointment of Joseph Pocevicius, sales manager, Europe. In his new role, Pocevicius will be responsible for selling RBS equipment and systems and helping direct efforts across the region, and assisting with trade shows, advertising, technical conferences and other marketing opportunities.

Pocevicius will be based at Tromp Equipment in the Netherlands and will report to David Kuipers, vice president, sales & marketing. Like Reading Bakery Systems, Tromp is a member of the Markel Food Group.

Pocevicius joined Reading Bakery Systems in 2012 as a project manager, primarily responsible for RBS projects located in Eastern Europe. His responsibilities included managing the successful delivery of project deliverables, controlling project scopes, and overseeing budgets and schedules. Pocevicius also provided training and technical support to RBS customers on the functionality and capabilities of RBS equipment.

Pocevicius is a Magna Cum Laude graduate of Pennsylvania State University where he earned a Bachelor’s degree with a double major in International Politics and Russian, and a minor in Business. He is fluent in English, Lithuanian and Russian. While at Penn State, Pocevicius was honored as a Scholar in the Strategic and Global Security Program, an Intelligence Center of Academic Excellence sponsored by the Office of the Director of National Intelligence.

“Having been a project manager, Joe has extensive knowledge of RBS products and the issues our customers face,” said Kuipers. “This gives him a valuable perspective for his new sales position.  And his language skills enable him to effectively communicate to the broad range of customers he will be serving.”

 As part of his educational experience, Pocevicius spent the Spring of 2011 studying at Russia’s St. Petersburg State University where he undertook an intensive study of Russian language, culture and civilization. During this time he also served as an English instructor to groups of Russian students at the Center for International Languages

Reading Bakery Systems adds cookie line to Science and Innovation Center capabilities

Reading Bakery Systems (RBS), one of the world’s leading manufacturers of baking and process systems for the global food industry, has announced the addition of a dedicated cookie production line to its Science and Innovation Center in Reading, PA. This new capability compliments the facility’s existing flexible snack production line for testing crackers, pretzels and other baked snacks.

The 600 millimeter cookie line includes a Thomas L. Green Rotary Molder and Wirecut Machine, and a single zone, 9 meter long PRISM Recirculation Oven that includes both radiant and convective heat transfer methods.

“You can either recirculate the air in the baking chamber to create a high radiant environment, or you can directly impinge convection air onto the product,” said Shawn Moye, vice-president of sales, Americas. “The PRISM Oven also features our Thermatec High Radiant Steel Ceiling that ensures a consistent, uniform bake by storing and reradiating heat to the product.”

Moye explained that this expansion is part of Reading’s effort to offer more specialized testing options to its customers. “Having a dedicated cookie line will allow us to focus our efforts on those products, with the inherent components of a cookie oven that are different from our flexible line,” he said.

 The RBS Science and Innovation Center, run by Ken Zvoncheck, is available for food manufacturers looking to test and develop new products and processes. 

The 30,000 square foot Innovation Center also includes batch and continuous mixing capabilities and an expanded snack line for creating a wide variety of expanded snacks from corn, rice and other cereal ingredients.
