VERTICAL KNEADERS WITH REMOVABLE BOWL

The KNEADSTER is one of the latest developments at VMI, whose innovation is partly based on double-tool technology. The mixer has been designed with an increased tool diameter, synchronized tool rotation and without a pivot.  This design limits the increase of dough temperatures and promotes stretching and aeration while providing the necessary shearing action to properly develop the dough. The speed variation of the tools as well as the bowl makes it possible to optimize the action of the rotating tools for different recipes. Thanks to its tools whose shape fits perfectly to the bowl, the KNDEADSTER can work for all types of dough, from the stiffest to the most hydrated. The mixer’s efficient integration of the ingredients decreases the total mixing time by about 30% and limits the increase of the final dough temperature by around 50% compared to that of a conventional spiral mixer.

The KNEADSTER will be showcased with its snacks tools for pastries, cakes, biscuits and crackers.

The KNEADSTER can be integrated in automated mixing systems with bowl transport, for example to prepare sponge & dough, and/or drive resting or fermention process.

PLANETARY MIXER ULTIMIX

Sponge cake, muffin, creams, cheesecakes, etc. and require special attention in the mixing process, especially when they involve delicate ingredients to mix, such as egg whites, butter or cream.  The ULTIMIX is the industrial planetary mixer that can produce products with a wide range of density or viscosity thanks to the shape of its tools, their diameter, and their path in the bowl during their rotation.

The ability to interchange tools very easily, makes ULTIMIX planetary bridge mixer, a particularly flexible and adaptable machine.

The ULTIMIX can be equipped with three tools, same or different, and thus many possible combinations.

The programming of recipes also makes it possible to adjust quickly from one phase to the other, in a repeatable way while managing very varied products. The ULTIMIX allows the programming of 100 different recipes, which can each go up to 30 different phases.

The VMI ULTIMIX mixer is capable of operating 24 hours a day and can include the automatic integration of ingredients, and in some cases can further optimize the diversity of recipes, while limiting downtime in production. The ULTIMIX is an industrial machine that can integrate automatic mixing cycles, and be integrated into an automated bowl transport system.

CONTINUOUS MIXERS

The VERYMIX produces dough in a continuous process which provides better flour/dry ingredient hydration, consistent dough temperature control and better-quality dough on a consistent basis to the downstream production equipment.

On the VERYMIX horizontal continuous mixers, VMI offers multiple tooling designs in combination with multiple kneading chamber shapes depending on the types of products that customer is producing.  The tooling and kneading chamber for a frozen dough will be differ from the ones provide to produce a croissant dough.  This gives us the ability to optimize the dough development for each customer. 

Consistent quality on a large scale (500 kg to 8,000 kg per hr) is possible for a wide range of products: traditional bread with or without sourdough, sandwich bread, buns, Viennese pastry, puff pastry…
With over 300 continuous mixers installed throughout the world, VMI's design was developed specifically for the most demanding type of production: patented pre-mixer to homogenize ingredients, optimal design tools and bowls adapted to different types of dough, high-performance process from ingredient dosing to mixing.
